The presence of the very pleasant, unintrusive and lasting minerality deriving from peculiarity of the territory enriches the aromatic balance and is essential to the personality of this sparkling wine. A sharp spicy sensation of thyme accentuates its complexity.
Taste: dry, pleasant and fresh, the right balance of acidity and sweetness. The mineral component significantly improves the structure of this sparkling wine, making it harmonious, savoury and highly persistent. The highly pleasing after-taste deriving from the fruity component with hints of citrus, initially perceived in the bouquet, slowly and enjoyably expands into an elegant and refined sensory pleasure.

Food pairings: this sparkling wine, ideal as an aperitif, goes well with first courses in general and is excellent with seafood risottos.
